Chocolate Protein Muffins
Here’s what you’ll need:
2 Eggs
2 tablespoons of cocoa powder
2-3 scoops of chocolate whey protein powder (i used Scitec Nutrition whey isolate chocolate)
1/2 teaspoon of baking soda
1/4 teaspoon of salt
1 cup of all purpose flour or almond flour
1/3 cup of stevia sweetener (you can experiment with this)
1/4 water
Sliced small or big Proteinbar or Chocolate bar pieces or Raw cocoa nibs
Combine all the ingredients and put in your muffin tin (use muffin cups). Bake in a preheated oven for 25-30 minutes at 350 degrees. You should get about 12 muffins from this recipe.
A couple things to note when you’re making high protein muffins:
-Experiment with the sweeteners. I’m personally not a fan of hugely sweetened protein recipes.
-The amount of protein powder you use and the type of protein powder can affect the taste of the recipe. Some protein powders are pretty sweet tasting themselves. In addition some powders have additional ingredients in them that can effect the outcome of the muffins.
-I suggest using whatever protein powder you’d normally use for shakes, and modifying your recipes to work well with that specific product.
-You should expect your high protein muffins to have a heavier consistency than a regular muffin. You just have to adjust to taste.
